I haven't tried any VR driving games, but my personal bet is FOV and depth-perception. I also cannot keep a car on the road in a game like I can in real life. So sense of speed or where the car is at all. If I had to drive through a screen I'd be more of a menace on the road than an asian woman.

I tried Pimax Crystal Super U L T R A W I D E with advertised 140* HFOV.
they lied about the fov. most people get 110*, which is just slightly above the meta quest 3, but everything above 30* is blurry and full of chromatic aberration

This. When you crank up your FOV slider in a shooter it feels like you're motoring even though you're going the same speed as people on 90FOV. I also think it's cause OP is in an F1 car and really low to the ground and you also don't feel inertia when you're driving in a video game

it depends on field of view and camera position and camera effects
you don't want high fov for simulators but then you'd need triple monitors or vr to compensate for the lack of peripheral vision
arcade racing games can get away with cranking up the fov

my dream setup is triple 42" OLED TV's for asseto corsa and truck sims, but i cant imagine dropping $9000 on TV's and GPUs.

also im a lazy bitch and don't like setting up wheels pedal and shifter every time i feeling like sim racing. Sim rigs are just way too expensive and it'd be something i'd see myself using alot for the first few weeks then see it just collect dust

Limited FOV (console games are the worst offenders since you usually can't even edit the settings), lack of G forces and vibrations under your butt, sounds not loud enough, modern real tracks having no objects zooming next to you due to safety concerns.
Don't fall for VR, it also lacks later vision, a triple 42'' set-up will do the trick for the most part though.
