You cannot stealth your way past The Drunkard or many other mini-bosses standing in your way.If sekiro is a stealth game then elden ring is also a crippled-stealth game with the abyssal woods being the best location in the entire game.

Moving from that yeah you can kill all of the guards with rats or whatever but you can also mow down every guard in splinter cell, massacre the entire map in hitman or sword-fight every guard in thief but that is not the intended (or in the case of dishonored the only) way to beat the game. Sekiro is like batman - a nice power fantasy game with stealth mechanics but it's not A stealth game.
