Looking for a high quality game to sink my teeth into and spend 1000s of hours in.
What do I mean?
>Bloons tower defense 6
>elder ring
>Caves of qud / Elin
>Pokemon ( when I was 5 )
>DMC 5
>Modded minecraft
Genre doesn't really matter, you know what I mean. And if you don't leave.

1) Oxygen Not Included will do the trick but has a steep learning curve.
2) Dyson Sphere Program is another one I liked that is more intuative than ONI.
3) Rimworld is an obvious choice.
4) I am personally fond of Dungeons of Dredmor. It has dated pop-culture references and is a product of its time, but is a solid rogue-like nonetheless.
5) I must mention Fallout New Vegas for its infinite playability using mods. Some quest mods are very high quality with long interesting stories, well voiced NPCs, immerssive crafted environments, radio stations with a host and songs, and unique weapons/items. I've easily sunk at least 1000 hours into FNV with quest mods (steam says 500 hours but it doesn't count the playtime when launching the game from a mod launcher).
6) Portal 2 is another infinitely playable game with workshop maps. Some maps are complex puzzles, some are streatching the limits of the engine and mechanics in mind-boggling ways, and some are episodic story driven adventures.

Why not try one of Bethesda Game Studio's endlessly entertaining projects? Skyrim is a classic of course, and they just re-released Fallout 4! It would also be remiss of me to not mention that smash hit Starfield. With it's procedurally generated planets, you can easily play for thousands of hours.
