I prefer textures that are similar to vanilla but in higher res like https://www.moddb.com/mods/skyrim-realistic-overhaul
also used to run NAT but now I like Silent Horizons with Cathedral weathers
Verdant grass mod looks neat as well

I only find vanilla combat fun as a sword and shield type character because at least there are stakes and more button presses involved than just being undetectable and one-shotting everything.
With mods magic is a lot more fun though
