FF7 and OoT couldn't be any more different - just the same for 7Remake series and NuZelda.
IMO, Rebirth is one of the best games ever put together. It translated FF7 as I remember it, and was ambitious enough to start introducing new twists. In terms of video game narratives, I unironically think Rebirth is also one of the most ambitious, epitomizing whatever Kitase and Nomura have learned since making FFX (which was their most vivid attempt, but perhaps less subtle that what followed).
NuZelda is also commendable, but leaves way more potential on the table. Free-form climbing and dynamic building are awesome ideas, and both games offer a strong proof of concept - but neither takes their ideas to the next level. NuZelda still hasn't presented a strong, coherent dungeon, which should be a benchmark for how the series can incorporate new ideas.
>Shrines
These are a half-assed attempt. They follow Nintendo's atomized game play style guide, which is innocuous enough, but I think they're more of a concession to the constraints of open world gameplay.
In general, I think NuZelda would strongly benefit from strategically employing constraints instead of quadrupling down on open-ended gameplay. Player ingenuity lives between a rock and a hard place, and all creation is an act of destruction.
