Original is simply more bizarre looking. The overall color palette is extremely desaturated giving an odd mix reminiscing of pastel and denpa aesthetic. Huke's original design had every character with bright colored eyes and the single white pupil made them very alien looking, despite the white pupil being kept eyes look noticeably more aligned with current anime design in the remake.
Those scratchy particles layered over the original designs were meant to imitate the texture of manga tones as well as giving an otherwordly feeling.
Remake does the same mistakes every other remakes do, everything is too smooth and too clean. Colors become standardized and nothing really stands out even in character poses which are all unremarkable.
Remakes "looks" better but it doesn't "work" better, and in the case of s;g you'd rather experience a more distinctive work than a cleaner but less original one.

Original is stylized, dark and gritty appropriate for the setting.
New version is generic moe anime like every other generic anime.
They did the same shit with the Higurashi anime, for some reason the industry has decided that everything needs to be bright, cartoony and plastic looking, probably to make it more cutesy, attract moefags, and hopefully sell figures.
But it's especially off-putting in a dark psychological series like this that is meant to be dramatic and taken seriously. The characters don't need to look like dolls all the time.

Original s;g looks good, it looked good for 2009 and still does in 2025, remake looks different. If original s;g looked like shit no one would have played it or talked about in the first place considering it came during the golden age of VNs (the 2000s) and it still managed to stand out from much of its competition.
In terms of pure style it's even one of the better aged VNs of all time. Original Key VNs or muv luv both look 5 to 10 years older than they are and s;g could have legit released in 2014 if not for the extremely 2000s otaku/akiba culture oriented themes.

The original looked great and also unique. The original also easily runs on pretty much any toaster. There's zero technical or artistical reason for a remake. Whoever is responsible for this remake better be preppared to get his ass torned apart when this shit flops hard.
