If there's an engine fire, there's a decent risk that it will spread and cut the wing off etc.
Also, having less engines means that your remaining engines will have to do more work and can overheat.
And it's easy to shoot the engines first, then finish the kill when it's already wounded.
In the end, there's very few places in a plane that can sustain damage and continue flight.
