There's still more people playing Skyrim and Fallout 4 than there are playing Starfield.
Why is it so boring? Even for Bethesda, the main plot and nothing characters are worse than nothing. For an adventure that is focused around mystery and conspiracy. Where is all of the intrigue? Where are the high stakes espionage missions? Essentially nothing happens outside of the one companion that gets jello puddied at home base or on the space station.
