I want to get an iPad to get into digital art and make videogame drawings. After some research, I'm thinking about getting an iPad Air 11" M3. What do you think?

Look into the Wacom drawing tablets. They are a bit pricey but you'll have an easier times finding plugins for software like Photoshop and blender.

If you're just a hobbyist, then Procreate is great and can cover basically anything you want to do with some work arounds. You can even do animations with it if you really want.

The Wacom Ones are good if you're dipping your toes, the only downside is they don't have additional buttons for binds.

I have the previous Intuos Pro. Those new buttons look wacky but I'd wager they're a good improvement. They look easier to reach than the long strip of buttons.

I've seen incredibly impressive professional artwork done on an iPad. Not saying it's a replacement but seems to be a fine tool.

I don't know about art but I just wanted something causal to take notes on and consume. I just got one of those, I like it. Though it feels like the touch sensitivity is strangely low compared to other touchscreen devices.

It's pretty good though, very snappy. I wish you could fullscreen every app when connected over HDMI though. I'd use Moonlight game stream on my TV.

Being a luddite and obsessing over obsolete e-waste doesn't make you cool. AI is the future. Buy a high end GPU and learn to prompt if you want your art to go somewhere.
