Were these games any good? I never played them back in the day since the touch controls seemed really unappealing to me.

I never finished spirit tracks but I remember them being really good, the only real complaints I hear about them any time they're brought up is from shitters complaining that the timed oceanking/whatever dungeons are too stressful

Pretty decent games.
Lovely tech demos of what the DS can do.
Phantom Hourglass is to WW what MM is to OoT. A weird and whacky, oddly surreal adventure in a world that is not hyrule so they can bend rules a bit with how they run things. However, it's clearly a rough attempt at what the DS can do, so they sometimes can feel a bit weird, and the game's attempt at creating an eriee atmosphere falls flat when they reuse the same generic creepy music everywhere. All in all, a solid 6+ game.
Spirit Tracks is a much polished game overall. Better dungeons, plot, music, items, minigames, pretty much everything. Also has one of the strongest plots and characterizations in the franchise if you care for that. A solid 7+ and maybe even an 8 during it's peaks.
The control scheme is never really an issue outside of ONE singular instance. The game is responsive, creative with the ds and never really demands anything too complex to feel like a chore. And hell, there are games like TWEWY or Ninja GAiden DS that play entirely with the touch screen and are far more demanding.
That said, SS has the pan flute which i'll admit it does kinda suck. I've learned to play with it and know its quirks, but i can tell it was a pretty crappy addition.

They're decent, worth playing if you've already played the classic LoZ games and want more.

There're romhacks out there that convert the games to traditional controls which made them less of a chore.

Phantom Hourglass had a lot I didn't like, but it also had some great items and good new ideas. Spirit Tracks feels like a more polished followup and is unironically one of my favorite Zeldas despite hating touch controls, but it still has qualities that tend to filter people beyond that.
Touch controls suck, but I'd still recommend at least trying both.

Otherwise great games made mediocre due to the retarded decision to make controls touch only rather than optional. There were other retarded gimmicks too (blowing on the mic and closing the screen) but neither have the magnitude of the touch controls.

On a side note, the online multiplayer in phantom hourglass was one of the most rage inducing games ever. I loved it
