You add the pirated version on steam as a non steam game and set the compatibility tool to either Proton or you download Proton-GE and choose that instead. Literally just right click the game and the compatibility tool selection is in the settings.

GE has custom fixes added that fix stuff like some in game movies or older games that aren't on Steam like VNs and whatnot.

You need to use wine for that but yes, you can set it so wine auto launches whenever you double click on an .exe file.

ge is just a non-valve 'bleeding edge' fork with a few additional patches that might work better for you.
if you install wine directly then yes that is how that would work. after install however i would recommend running the game as a nonsteam game because then it would use steam's proton with a bunch of extras like dx12 support and such

Standard Proton is all FOSS and Legal.
GE includes copyrighted codecs and strictly speaking is illegal, but the likelyhood of people caring is super low.
IMO GE is dumb and we should just re-encode shit to use non-aids codecs
