The fighting is fun but the platforming is infuriating. Dark Souls bloodstain mechanics do not mix with instakill spikes, especially not when you're playing as the DLC characters and the game puts your moneybags in spots that are practically impossible to reach because its still coded assuming you've got the fishing rod. There's a lot of fun stuff you can do with your items and moveset that get kind of skipped out on when 90% of the game's content is navigating spikes/pits/lava that kill you in one hit, unless you're playing as Plague Knight in which case it's total menuing gore.

You can use some of the subweapons to easily pick up money bags in hard to reach places, though I do agree that I'm not a fan of the soulsborne death penalty punishment in general in any games

Assuming you have the requisite item, of course. Specter Knight in particular, there's 3 different items that each work in only 1/3rd of the possible circumstances (and only when upgraded), so gg. And even though the game is balanced assuming you'll drop literally like half your cash, its still fucking annoying.
I'm not the biggest fan of platformers across the board, but the platforming is so much more punishing than the actual combat it feels to me like it interferes with the overall balance. Like, in Plague Knight you're constantly getting temporary +HP potions, but they're all useless except the one you get right before the boss fight because the thing that's going to kill you 99% of the time are oneshot spikes and not the actual mobs. You total HP count is irrelevant. Whenever you fight a boss and get to actually flex you inventory it's pretty easy but IMO still fun because they made the items themselves very fun to use. The most fun parts of the game are the bosses but they're only individual minutes long compared to the rest of the level.
