Honestly for most games you're not missing out. DLC has gotten quite lazy since the Fallout 3, NV, and GTA days. Some games try to bring it back but they usually go over board with how much DLC they release.

Depends on the game in question, but broadly speaking, if you're an actual vidya enthusiast you'd play both versions so you know for sure which one is your favorite.
