I found 7 boring in terms of story, it's better than something like 6, but I wouldn't rate it against the PS2 trilogy, let alone Electrosphere. It's probably below X. yeah, the base game has one future plane (Wyvern) at the end of the unlock tree and some earlier planes get access to future weapons like railguns and lasers.

most of the really crazy planes are in the dlc packs. they did a crossover with Top Gun for that new movie and Dark Star has the highest top speed of all planes and uses laser guns as a default instead of machine guns.
the only problem with dlc planes is that they're unlocked from the start if you own them, its on you to hold back and not use them during your first playthrough.

HOWEVER

There are a few bugs in the game that haven't been patched. I'm not sure if it's only on the hardest difficulty setting but the last boss can't be shot down, like when his healthbar reaches 0 he still keeps spamming attacks and when it should only take 1 more hit to finish him off you can empty all your missiles and cannons into him for 5 minutes straight and he still keeps flying.

I think you appreciate (or hate, it's up to you) Project Wingman more after you have played a few ACs
With that in mind, start with AC7 since it's extremely cheap now, then emulate the Trinity (Ac4, ac5 and AcZero) and finish with project wingman
