The main character is always intentionally somewhat of a blank slate in a situation that's fairly relatable for most players (a fairly average Japanese high school life) so you there's still some space to build him as you like. Having to actually structure a Persona game around being an adult with a job in Japan would mean having to set things in place. What kind of job does the MC have, skills or hobbies, does he have a partner, a female or male partner, what kind of friends, etc. You'd also have much less free time because most workers in Japan have long days and socializing with your coworkers afterwards is heavily encouraged, so the structure between a normal high school day and socializing and dungeon crawling at night wouldn't make sense anymore. I'm not saying an RPG about being a Japanese salaryman can't work, but for Persona it'd either be a purely aesthetical change which is a waste of an interesting idea or they'd have to change so many things it wouldn't really feel like Persona anymore.
