The main drawback to orcs is the sunlight hurts them, but many breeds have either a resistance or immunity. Sauron even has his own Uruks. Its mainly numbers and the fact that the morale of men is still paltry to the domineering, unforgiving and cruel will of Sauron. Having superior forces also helps. A troll can easily rip a horse in half, Theoden was thrown on his ass by one Nazgul and fell beast that made the rest of his forces run away in fear.
