They hated the Alessian Empire and being a part of it so goddamn much some of them even allied with the High Rock elves to fight them, and their entrance into the Reman Empire is never elaborated upon or talked about as anything special, and so they were presumably conquered by force like everybody else. Ulfric wants to be king because he thinks he can do a better job (with no real plan of what he would do differently besides "be independent") and as a way of getting even with the Empire for wronging him, as he perceives it.(too long, 2 coming in next post)

The ban on Talos worship is part of that, but there are lots of dudes preaching in the streets about Talos all over the empire and nothing happens to them. The execution in Solitude is shocking to the people and more of a recent development as a way of stating, "Hey, if we think there's even a hint of you siding with the Stormcloaks, like wearing a Talos amulet, we will find and kill you," rather than something that had been happening already. People are actually upset with the Empire because there is massive economic downturn. Morrowind's economy is in shambles after the Red Year, Hammerfell left the Empire, Black Marsh has effectively left the Empire, and most of the continent is controlled by the Empire's enemy. Trade sucks for them now. Winterhold is fucking gone except the college, and it was a major port that rivaled Solitude. People are extremely dissatisfied with the state of things in Skyrim. And where is the Empire in all this? Licking its wounds and staying huddled in Cyrodiil. What do they do when Ulfric announces he wants to be High King? They bring an army to kill him. It's a very bad look, and it makes sense why so many people would want to support the Stormcloaks. Almost anything sounds better than continuing to live under the Empire.

It's based on how IRL Norse deities were all labeled as being just different names for Roman deities, like Loki being Mercury. There are a few characters in Skyrim that dispute that, but most of them simply accept it as true and it isn't controversial.The Reachmen are the obvious exception, and they most likely worship Hircine, Namira, and maybe a few other daedra, which is pretty unpopular, to the point that a Vigilant of Stendarr might just come to your house and bash your skull in if they found out you worshiped those particular old gods. I believe they are mentioned by name as "old gods" only in TES Online though.
