If it's something like BOTW it gives you outfits from earlier games. Non-Zelda amiibo give you generic rewards like food or weapons.

Each game with amiibo compatibility has a specific screen you go to in order to scan the amiibo in question. Most of them just look at the type of the amiibo: some look for a specific model, while others will recognize the character. For example, there's a Smash Bros series and Mario series version of Luigi, but games will recognize both as a Luigi figure. A select few games let you write data to the amiibo itself which it can then read when doing the scan, such as Smash Bros or the recently released Kirby Air Riders ones that save CPU levels that you can load as an ingame opponent. Usually games will just give you a little reward, like a costume for scanning a specific figure. Games with rewards often let you scan a certain number of random amiibo daily for more currency/consumables, so most amiibo with just a single purpose can still do something in other games.

Generally speaking, amiibo are made for one game with one purpose in mind. Only the random reward games make use of any others because it doesn't matter what they are (even if released later, to answer that question). There was a period where a number of Mario games made use the large number of Mario series amiibo, and even some Smash amiibo, but most games don't do that anymore. That was 10+ years ago on the Wii U when they first started doing them. These days you pick up an amiibo because you either want the specific thing it unlocks in the specific thing it's for, or you just want the figure itself.
