It's all about staying away and knowing when you can move in to attack. Liu Kang is pretty safe because he can sit back and then fly in with a kick when Shao Kahn taunts. If he's close uppercut him away. It comes down to learning how the AI works through practice it takes a lot of repetition to get a feel for it.
