So... basically this means Ubisoft was so incompetent they had database instances directly internet-reachable, i.e. total lack of perimeter defense and given how bumfuck stupid a mistake this is, probably also no defense-in-depth with layered access within their server network and corporate network - which explains how the people who hacked in through MongoBleed were able to exfiltrate as much as they could.

MongoBleed is an exploit that is used to dump arbitrary sequences of RAM memory, and is used to exfiltrate things like access tokens, passwords, etc. Of course that means those still need to be IN memory. Source code is the text written by humans (and now AI) that then gets turned into machine code the computer can understand with a "compiler". A program that basically chews up something written by a human and spits out something the computer can understand

If you've wondered why you can't easily just grab the data from a console game and turn it into a PC game this is why, the source code is "gone". It has been chewed up and spat out into machine code.

You can reverse engineer this process by decompiling (turning machine code into human code again) or emulation (the computer pretends its another machine so the code can run)

It's the source of the executable file for an application. If you have the source code, and the right compiler, you can create an exe file for the game. If you also have the right code editing software, you can modify the source code to your liking before creating the executable.

Basically, it's only really valuable to programmers, either so they can make hacked versions of the game, or so they can mod it (or fix bugs the developers left in...). A pirate wouldn't really be interested in the source code, not if they already had access to the executables and assets.
