Sometimes the game will consolidate XP gems into one gem (to clean up how much is on screen) so you'll pick up an unsuspecting XP gem and get more than you were expecting.

Arcanas are just power ups. You'll get access to more of them and you unlock a way to choose them at the start of your run + more during your run. I'm like 200 hours in so I've forgotten how that sets itself up.
