You could make a good argument for either DaS2 or 3. It's just "incoherent theme park zones" vs "triple-A brown and grey mush".
ER would belong there too honestly, seeing as the base game is stuck in "piss yellow" mode for a vast majority of your playthrough, only being broken up by the rare "aids piss red" scarlet rot areas and white snow areas. If the ER DLC did anything right, it was making a world that was actually beautiful again by making good use of strong color themeing to make areas feel distinct and aesthetic.

I'm playing ER for the first time. I really dislike how open the world is, since I don't know anything about what's going on in the story and I'm not playing with a build I like AND rune amounts are small this early on so I can't change my build yet, I'm not having as much fun as I was with Dark Souls honestly. With DS though I got filtered by the poison swamp (forgot the name) but at least there I was playing how I wanted, and with Demons' Souls (ps3) as well. I hope I can find more fun things to do in ER next time I play and I'm not just once again wandering aimlessly

Elden ring isn't really open world, you have to see it as big dark souls. Each area is still it's own level with its own set difficulty, legacy dungeon and quest/bosses
Some areas are meant for early on, others will kick your shit in unless you're skilled at the game.

My advice is to explore the area south of limgrave named the weeping peninsula, it's an extended tutorial area so to speak where you can find merchants, quests and things to do and see.
Once you fully explore it, go back and continue in limgrave to tackle on stormveil castle, which is the first true dungeon.
Also Elden ring really wants you to play with some spells at least for varietys sake, there's many mechanics and npcs that are about spells and miracles so keep that in mind.

You're going to piss off a lot of fanboys by saying this, but you're right.
Here's some general advice:
>Track down flask upgrades early, tears can be found at churches. Go down to the southern most zone (past the bridge) asap, there are three churches there that contain a total of three tears.
>You want to get Vig up to 40 asap, damage in Elden Ring is dramatically overtuned so it will make the game far more reasonable if you do so. End game you should be looking at 50-60 Vig.
>A lot of the somber stone weapons are traps, if you see a somber weapon with a generic ash of war avoid it, you will get better performance with a generic weapon.
>Ashes of War are busted shit and you can probably beat the game just by spamming Square Off or Vacuum Slice.
And here's an early game route that I typically like doing:
>Go to the gate, get Torrent
>Travel southwest to the mine, complete it but don't spend the runes.
>Travel east along the lake shore/river to get to the dungeon with Patches, defeat him and warp back to the start of the dungeon to set him up as a merchant.
>Buy Golden Feet + the recipe for Golden Feet (pop one after defeating any major boss, bosses are by far the best source of rune and this will make them even better for that purpose)
>Intentionally trigger the trapped chest in Patch's room to get teleported in between the church with the wondrous physick plus a tear (to the North) and a fort with an important key item for later (to the South).

After that do whatever. I'd also consider going North to Liurnia of the Lakes and immediately going Northwest to complete the Caria Manor dungeon. Beating the boss opens up Three Sisters, which in addition to being the start location for Ranni's quest also gives you access (there's a drop onto a building, just travel by the edge of Three Sisters and you'll see it) to a merchant that sells Carian Retaliation, which gives any shield a buckler tier parry frames.

Some other useful things to keep in mind:
>There's a merchant in western Weeping Peninsula that sells the Lantern, an item you can use infinitely to make your character produce light without needing a spell or using up your offhand to hold a torch. Absolutely worth picking up for the few obnoxious dark areas in the game.
>Some good easy to get carry weapons of note include the Great Mace (found in northern Liurnia, right before the grand lift in a chest in the war camp), Claymore (Castle Morne, dungeon in south Weeping Peninsula), Bloodhound's Fang (defeat a gaol boss on top of a mountain accessed from taking a spirit spring in the ravine right before the bridge to Weeping Peninsula), Cross-Naginata (from the church where you get wonderous physick, go north into Caelid and then south to a mine/dungeon still in Caelid), and the longsword you can just buy from the Roundtable Hold.

Miyazaki has this famous line about inventing his own story due to not knowing enough English to understand the novels he read when he was a kid, and that translate to these games as having to make your own story sort of bullshit to understand what happens around you. I Iike DeS a lot but it's area design philosophy is pretty different. Darkroot is so great because it is a mostly large open space but with enough limitations in traversal to make exploring it interesting and clearly defined but subtle internal zones, in addition to connecting to several other areas in a natural and intuitive way. DeS levels are cool and intricate but tend to be more linear, there are loops but they are still straight lines of progress that you just tackle in order, and each section has a defined beginning and end, and an order that you generally explore them in. 4-1 is probably the closest area, except maybe 5-2 which is obviously not likely to be anyone's favourite, but it still has one entry at the archstone and one exit at the boss.
Demons Souls levels are more like the Undead Burg, at least when they're good, which is also great obviously but not really like Darkroot and there's definitely not a bunch of locations like it.

Also dickstab forest hunter shenanigans is still the best PvP experience fromsoft have ever made. The bell towers and swamp/aldrich ones in ds3 just never really hit the same and how good Darkroot was for it is probably most of that.

All Souls games have stories that are hacked together messes.
The issue for Elden Ring is that instead of it just vagueposting about Gwyn fighting to keep the Flame going and the consequences of that, it tries to tell a story with a bunch of interacting important characters that all are present and mostly still alive and active.
So the sloppiness starts to be a much larger issue when you're looking it in the face.

Funny, it ended up actually being an artificial forest in the end, though it probably wasn't really intended to be at first. But after the DLC came out and made the Royal Wood a manicured, managed forest with gardeners and everything, that after a few centuries of neglect turned into Darkroot it makes sense.
