Why is the normal difficulty called "normal"? are the others not normal?

Some are, and you can tell it's an outright lie because mechanics don't make sense at that difficulty. Where Winds Meet on difficulties below Legend and Assassin's Creed Shadows on difficulties below Nightmare are two examples of this where you're told what difficulty the game is balanced for and you can see it's clearly not.

In WWM's case you are functionally invulnerable in combat and get free auto parries on any of the lower difficulties meaning you don't even learn boss or even enemy movesets at all, and you can tank everything even without a tank build. Legend disabled those mechanics and forces you to consider tank builds or parrying to fight bosses and even basic enemies.

In AC Shadow's case it outright tells you Normal is the difficulty they designed the game around, but then you actually play it and you're functionally two-tapping everything, stealth has no purpose since Naoe can run around slaughtering everyone with her katana, all weapons are equal meaning you just pick the biggest number and passive buffs are pointless, you're borderline invulnerable, and enemies are as dumb as bricks. Then you go to Nightmare and weapons have a clear hierarchy, stealth actually matters and enemies can actually detect you sneaking around making the silent walking engraving make sense why it even exists, Naoe has a very clear damage difference to Yasuke instead of steamrolling enemies, and she dies quicker than Yasuke who can tank stuff.

Nowadays it feels like anything but the hardest difficulty is made for people who just want to sleep through the game, and then you coin flip if the hardest difficulty is just damage sponges or where 95% of the mechanics even matter at all.

They advertised the game around the stealth upgrades pretty heavily, but they don't exist on anything below Nightmare. Like, straight up none of the seasonal differences remotely play a factor on lower difficulties. Winter's crunching snow and icicles falling is the same as if you were running around in spring's torrential downpours i.e. you are functionally invisible.
