They did in Valhalla. Odyssey did not say one way or the other. Valhalla confirms Odin got stuck in a woman's body and showed Kassandra as the main character. Shadows also confirms Kassandra as Odyssey's MC as does Jade though Jade isn't out yet and relies on beta gameplay footage.

Odyssey and Valhalla by default make you make choices because they want the Witcher 3 audience. None of the choices you can make are canon because it completely contradicts how the Animus works since it would mean you are literally changing reality by being able to do so. The Odyssey novel is what's canon for Odyssey and Kassandra makes some exceptionally stupid decisions in it. You can't. He's mandatory for several Shinbakufu members (The main story), the entire Templar story is his, multiple side quests only work for him like the crests, Nobutsuna's Students, and the betrayers, and multiple targets in Claws of Awaji are tied to him. He's also significantly better to play if you're doing contracts or Corrupted Castles because he takes what takes Naoe an hour to do and does it in about five minutes because he's completely broken. Postgame is basically 100% Yasuke unless you want to make everything take significantly longer, especially since so much is tied to Animus challenges that require you to clear multiple castles.

Less so in Shadows, which I played in "canon" mode too, simply because I couldn't be bothered.

The problem is that you literally would not be able to sync anyone's memories if you could make choices at all. The central conceit of the Animus is that in order to view memories you must do exactly what the ancestor did otherwise it kicks you out of the Animus and you have a desync forcing you to redo stuff just so your body isn't rejecting it. The only time anyone ever gets around this is when Layla forces Deimos' memories at a specific point to understand what's going on in one of the DLC episodes or the ending of the Family plotline, I forgot which, and she can only do it for like a minute before her organs start rejecting her and she starts bleeding out of random orifices. Even when she tries to go to Aya in Origins she can't until she's synced Bayek to the specific point she wants to go to Aya because her kidneys will fail.

The only thing the Animus does is allows you to go to locations the ancestor did in that time period and fudge the in-between stuff like collectibles or stealing from people, how you parkoured, etc. It's why in the games prior to Unity you had massive sections of the map impossible to be visited because the ancestor did not visit them at that point in time. Dialogue choices are major aspects of a character and would not work at all, you should be getting rejected outright for saying anything the ancestor didn't say.

Except this is already explained away in-lore from the very first game by you needing to interact with the environment to convince yourself you're that person and getting immersed enough that you can sync at the memories at all. Once a memory is synced then it's just the Animus itself handwaving stuff because it doesn't require you to be perfect anymore. The decisions you make that aren't important such as what object to move onto or what person to push and so forth are simply a product of the environment, they are happenstance, and so they don't affect your ability to sync. You don't think about them and the Animus itself understand what is important to sycning memories. When you do get stuff like the Metal Gear Solid event or the Trial of the Gods that is them literally hacking your Animus to allow you to dick around with them and basically functions as a side mode wearing a skin rather than syncing memories.

Being given a dialogue choice means you personally are intervening with history meaning you should instantly be desyncing unless it's the correct choice every time.

The entire philosophical basis behind the Assassin's Creed is moot if you consider the universe as deterministic and freewill meaningless.
The animus itself being a virtual reinterpretation, of a reality that's already subject to the "Simulation hypothesis", should tell you that what matter more is to offer the players choices and the result of those choices.
For all you know no one but you exist, you are just a brain in a simulation surrounded by NPC meant to guide you toward a mindset for reasons that escape you. You playing an Assassin's Creed game? Just another layer of the simulation for all you know.

The game cannot offer infinite choice and the (real) goal remain to have fun regardless of the choices, so you are constrained into only choosing choices that are fun. But the theme is to fight for freedom of choice.
Since the mythological period of Odyssey is about either begging the gods for a good fate ...or considering your actions matters like Hippocrates of Kos, having choices is the best way to play Odyssey.

Oh and stop projecting with the Witcher 3, discussion choices existed long ago and as explained above it actually make more sense to have those in a setting like Assassin's Creed.
It was a good decision, not for every game, but certainly for AC, even if "canon" is also an acceptable play of playing it.

Except it can't do that because you are supposed to be syncing true history and if you aren't then you desync from the identity you are trying to sync. The hand waves are why things like the multiplayer can happen at all (You are playing an avatar, not syncing a character) or you can randomly stab a civilian (Which then proceeds to desync you because it's not something the ancestor did). If you touch the main story at all you are syncing a character so you can't hand wave stuff outside of getting from place to place and even then there are limitations where you can even explore because the ancestor never visited that location at that point in their life. The fact that there IS a true canon for Odyssey also means that any dialogue options that are not 1:1 those choices means you should be consistently desyncing like playing as Alexios.

As much as I like AC:Shadows, it would have made more sense if a plot point was:
- the Templar doing all they can to erase Yasuke from history
- and in doing so, stupidly allowed Yasuke to kill more of them from the Shadows

The Assassins run Japan and have for hundreds of years. The Templars still in Modern Day have not taken hold so it's one of the few countries Abstergo can't do anything in and the Assassins would have zero reason to wipe him from history as his presence does not expose them in any way.

Abstergo has no reason to remove him from history because no one knows he's an Assassin or associated with them considering he killed all the Templars before they could get that information out. Yukari only knows of his existence because he killed her dad then immediately kills her a few days after she learns that, and the silver chick only knows of him because Duarte demanded it and he killed Mitsuhide and she won't blab because he saved her brother.

We cannot have that level of Wikipedia articles about all those subjects but Yasuke is "Oh, he just left Japan at some point after Nobunaga's betrayal", especially since he only became the master of Shinkage-ryu after Nobunaga's death and killed Mitsuhide after that. Someone would have written about him and neither side has any reason to hide information about him.

They could've gotten away with the DEI stuff if this was mid 2010's Ubisoft when they still had good faith but by the 2020's the whole company became a pariah.
When Ubisoft decided to release their "trump card" they've already lost faith by a good chunk of the vidya industry. When they tried to pull they "you're racist if you don't like this card" most people from majority to minority were in the camp of.

Because the ancestor did those things at that point. I don't get how this is hard to understand. Ezio can't go past the coliseum in Brotherhood early on because he as a person didn't visit it at that point. After a few missions then he as a person historically went there so now you can run around there. That is the understanding of how this all works. Altair collected all those flags and killed all those Templars while he was hunting his target which is why you can collect them, but why you can't randomly go to Acre at the start of the game unless told to because Altair never went there.

The implication of you being able to do the side quests and run around the entire map is that people like Bayek, Kassandra, Eivor, Basim, and Naoe/Yasuke all explored the country and did them early on. It's not the Animus handwaving, it's how it tells you what they did. Some side quests don't even unlock until after main story missions, particularly in Shadows.

No it isn't. It has explicitly explained rules as to how it handwaves stuff. Why are you arguing this if you don't even know how the Animus works? The character/race swap is only able to happen in Odyssey and Valhalla because the DNA is mixed in the former, and Odin's DNA is intertwined with Eivor's causing it to glitch. AC3 even shows you how it begins to sync you and how it layers everything over you. Desmond learning Haytham is a Templar is so shocking to him it breaks the syncing of his memory.

Because they as a group are effectively Hidden Ones and all of England was OotA city so word got around about them. Also, Aelfred being helped by Eivor is only important from the Order of the Ancients side of things, it historically has no relevance and they're just a random Norse settlement in England outside of that. Ravensthorpe actually fought against Aelfred early on which can easily be spun as vikings trying to attack England with no importance.

Eivor only helped Aelfred later on because of the whole leader of the OotA thing. Let's also not forget that Aelfred created the Templar Order so he wouldn't exactly want it publicly known about these things to begin with.

The Rooks aren't publicly known as The Rooks, they're just random gangs. The point of them is that the Assassins can have these random groups work under their banner yet still be anonymous. They also disappear as a whole a few years later after they join Jack and Evie causes them to functionally implode as an organized group. They can at least be chalked up to groups of dangerous hoodlums terrorizing the streets which is brought up in the DLC.

No, it was quite solid. It still needs a bit more refinement and to take some of the stealth changes from Shadows, but it's a good springboard for remaking AC1 if they want provided they change some things.
