If you have no other choice, then it's understandable. The White Gloves had no reason to eat people anymore and were just doing it for pleasure, which is wrong.

Humans don't really work as cattle. They grow slowly. It takes years before they begin to become self-reliant. You'd have to raise them on food that you could have been consuming yourself. And for all that effort they don't create much product. Raising Super Mutants would work better based on mass alone, but you're still feeding them meat you could have kept for yourself.

cannibalism is not healthy, but the main reason, I think anyways, is that it pins a target on the backs of weaker or fat survivors in a group that would have no chance of living without the protection of the strong, who would turn on them and eat them
