Because modern operating systems beyond windows 7 provide no additional capability that couldn't just be backported into 7 anyways.

Maybe it's objectively true but, assuming everything is as it should be, you're not ALLOWED to so why even bring it up?

I guess the GOG version could be since no one's telling you how to run your GOG games.

Because Steam does and still will work on Windows 7 until something in the certificate store for chromium breaks. Then it's a matter of slapping in the new certs and it will work again.
SteamCMD also exists for downloaded steam content as well, and that shit works even on XP.
Just because Valve doesn't support something doesn't mean you're not allowed to use it.
