If you go with warband I would recommend you playing with vanilla till you get a hold on the combat then if you feel like a masochist instal pendor and feel the pain.
If you go with bannerlords I would say even with vanilla the game is fun enough.

Why not just steal it? I mean if the horse is maimed and cannot work then sure, euthanize it, but why not steal the enemy's horse? It's just a horse.
