Because the touchpads don't give good feedback for movement and some games can make use of 2 movement inputs.

The dpad is honestly the more mystifying pick, since the gamepad has enough buttons for the button economy advantages to be kind of irrelevant when compared to the loss in precision.
The pad gives you enough buttons to handle 2D movement and miscellaneous inputs without the dpad and for menuing mouse support is ultimately better than cycling through a grid.
Even on the more janky first Steam Controller you could handle platformers without a real dpad.

Based on the official page on Steam, they're both on a swappable daughterboard, so replacements will be easy. However, swapping it to an asym layout won't be doable without some major changes since they're both on the same board.

have you tried using the touch-pads on the deck? it's super unergonomic. hurts your thumbs to be in that position for more than 10 seconds unless you completely shift your grip further down on the handles, making the use of the buttons or trigger/bumpers more inconvenient.

i've only ever used them for auxiliary functions, like quick-save and -load for emulators or a scrollwheel, while using gyro and joystick-mouse for "mouse-games"

They have a big learning curve. After that, they're great and you don't need the right stick at all. Even if you don't want to dedicate the time to learn, they're great for touch menus.

Why did they even pick X-Y-A-B? They could literally do anything they wanted. The letters could spell out G-A-B-E but they aped the Xbox controller instead.

Nintendo fucked up hard by changing the position of the X button on the gamecube, so they're not even consistent with themselves
Xbox's XY button placements make sense if you look at it as a graph
Sony's are objectively the best layout solely because the buttons are unique. There's no PRESS A bullshit that makes you wonder which fucking button you're supposed to press. Even X which is the only shared button, is still blue coded most of the time so you remember instinctively that you're reading a PS input. The triggers being numbered is also objectively better, I have no idea which one is even the LB or LT in the shitendo and xbox layout

It also took a while for the software to have all the kinks ironed out.
