A lot of modern sprite work just seems a little "bulbous". Few games of the era would opt in for such large sprites, and would never be that detailed.

older sprites were designed to work woth CRTs, if you made them today it would look bad on most screens, so they attempt to amke a style of pixel art that looks like what the pixels would look like to a person looking at them on screen

Shovel Knight is obviously NES inspired but they were both aware of actual NES limitations and when to ignore them because they're fucking annoying (eg sprite flicker). They used to have a whole bunch of write-ups on their blog about the making of stuff, from the sprites to the 'body swap' mode that's half "we want players to feel represented blah blah" and half "holy fucking shit Propeller Knight makes for a sexy rule 63 version and our artist gave her thighs like goddamn zeppelins" but I don't know if those posts are still up.
