Has any series actually benefited from going from linear design to an open world? I can't recall any example where it hasn't been a downgrade.

Not really. I feel most of the levels are far too tiny for that. Bowser's Fury is the only truly open world Mario platformer.

The only reason to go through the same areas repeatedly is for the entirely optional side missions. The main story makes excellent use of each location.

IMO the best missions in MGSV are the ones that take 20 minutes to complete all tasks.

I think playing Death Stranding on foot gives a similar feeling of satisfaction when you finally turn the delivery in at the end. You just dont get that feeling when you rush the game using vehicles.

I still think calling it "Chapter 2" was a mistake. The main story ends after Skull Face is dead. Calling it "Epilogue" would have drastically cut down on the complaints about it being unfinished.

All the Chapter 2 main missions require you to complete other missions to unlock them. You don't get them just for passing time. You may remind yourself of this by checking out pretty much any comprehensive guide for the game.
