The Star Ocean remakes were rated pretty good. I don’t think they censored anything as the original was pretty tame. Might as well play R.

The remake is better as a game overall but there's some things that are worse. In particular the dungeons don't feel very interesting when it's a bunch of copy pasted squares compared to the pre-rendered backgrounds The shot composition is worse in cutscenes too. Personally, I'd play one story on either the PS1/PSP and then do the other in the remake.
