It skips all the boring parts that are usually just exposition dumps, and lets you get right into the meat and potatoes of the gameplay. Since items are all switched up, you have to find the most optimal way to beat dungeons and bypass obstacles. You no longer have the safeguards that games would give you, like a sword to fend off enemies, so oftentimes you're just kinda finagling your way past entire sections of the game by improvising. Normally I use the logic that says that the game is still beatable (IE you'll never be permanently softlocked and every item can be obtained) but you can also remove that logic and just have the game be an insane mishmash, which may require you to utilize every glitch and exploit in the book. There's a ton of ways to customize your experience, in other words.

My favorite, bar none, would have to be the combination Majora's Mask/Ocarina of Time randomizer, which mixes both games. It's a hoot.
