Knights are more in tune with the idea of Cavalry, which the spear/lance is better suited for thematically.
Knights are also more likely to have a shield, being a more defensive archetype.

it is a correct assumption, but i would argue the sword is more in line with the nobility/chivalric ideals of a knight, while the spear is for the footmen or warrior on formation.

The assumptions are being made for the sake of a middle-fantasy party of heroes, admittedly. In a lower fantasy or realistic setting the two could definitely be swapped.

I know this is the trope but it's never made sense to me. Paladins mostly fight undead things like zombies and vampires; why are they using anti-armor weaponry against unarmored targets?

Fair enough, though it seems like you could just use a greatsword or put the sheath back on for that.

An ordinary greatsword/zweihander isn't actually heavy enough to cause damage with the flat of the blade, since the weight is evenly distributed along its length and they don't weigh much to begin with.
You'd cause more harm with a gauntleted fist.
