For most projects more staff and more time != better product. Humans don't work well like that. Small teams and short deadlines keep focus tight. And the lower budget means the higher ups don't stick their dick in so much.
The mistake modern games are making is they think they can solve the problem with more bodies, but that means substantially higher costs which then leads to more involvement from management who are scared their money is going to pay for some niche shit that won't sell so they demand more and more changes to widen the potential market which then leads to boring slop that doesn't sell.

It wasn't terrible. It was a perfectly average sci-fi movie. The problem wasn't even just the money spent. Sure it was far far too expensive for a video game company to be spending that on a movie, but it wasn't even an outrageous sum by hollywood standards of the time.
The thing that killed it and SE was that the japs weren't prepared for how protectionist hollywood is. You can't just put your movie out there and expect cinemas to show it. You need to suck the dicks of every fucker in the chain otherwise they'll just make a few phone calls and the global chain cinemas will all just totally organically decide to stop showing your movie a week and a half later. That's why I couldn't see it in the cinema. It arrived with no fanfare, hung around for a week and a bit and no cinema near me would carry it even though they had idle screens and nobody showing up for their matinees. There was serious bullshit happening and I'm damn glad SE learned from that mistake and didn't try for a worldwide cinema release for advent children.

I don't deny that. But the important thing is that the actual development was compartmentalised. Doing all that CGI was expensive and hiring CGI artists where before you didn't need them was going to add a lot to your team. But the actual core of the game itself, the bit that actually matters was not substantially different to a FF6. The problem with modern development is that they have 10 guys doing the job of 2 and not all the work is even being done in this country let alone the same office. FF7 was expensive and a paradigm shift, but it was unbelievably more manageable than today's disasters.

One of the main reason for AC being a lot better is because they focused on the fights and skills more than the drama. The games are more anime, in a sense, meaning that the story is moved onwards by conflict rather than dialogue.

That's more PS2 era, imo. Games like Toy Story 2, Croc, Parappa The Rapper, Medieval and FF7 are what embody the real PS1 essence.
Anything too late into the PS1 lifespan gets too smooth. Deathtrap Dungeon and Nightmare Creatures are great ones too, showcasing the PS1's technical limitations by limiting the draw distance, giving the games a boost in their atmospheres of dread.

Final Fantasy 9 remake has been circling a rumor mill and every time an announcement is supposed to come, SE shelves it.
7 is the most lackluster of the PS1 trilogy. But you know how people are about firsts. It was the first that went from 2-D sprites to 3D models on pre-rendered backgrounds, so it'll always be nostalgia bait while the other two get shelved.
