What RPG does thief class very well?
Thief as in DND glorified trap radar or thief as in bethesda borderline invisible kleptomaniac?

There aren't many non-crpg games that offer thief roleplay/gameplay that isn't some brand of "steal gold" with maybe some assassin flourishes to make them not shit in combat. Most games don't even have a developed crime system. Red Dead Redemption 2 might be one of the better ones (still not that great) but that isn't an RPG. Elder Scrolls might be the best modern RPG one in a mechanic sense (You can pickpocket, BnE, fence goods, somewhat rudimentary crime system) yet you have very little roleplay elements as nobody really treats you as a thief outside of the literal questline around it. The Infinity engine games are more or less in line with the Elder Scrolls games mechanically.
