Any tips?
I started recently and just kept getting killed by skeletons with their arrows and the enemy spawn rate feels really high considering i just started a new world.

Play on easy mode. This isn't Touhou, you don't get anything special or bragging rights for playing on hard or normal.
Skeletons are deadly, you need to move fast to outmaneuver them and strike before they can shoot, or use cover to shoot back at range with a bow of your own.

And that's a beautiful thing. In 2010, Minecraft was sold as a Lego game where you have to collect shit first while surviving monsters trying to kill you.
If you follow guides or spoiled yourself through all the content, you just fall to the trap of minmaxing with semiautomatic farms, which is just copypasting other people's work. Frankly, the base game doesn't offer much compelling content, but if you are actually challenged by gathering resources, you can get a lot more satisfaction out of it.
