Sans' buildup is underpinned by his moments of 'I am going to kill you nigga' seriousness. When he finally lets loose and meets, and even surpasses every expectation you had of him, it is extremely thematically satisfying and the gameplay and soundtrack work to accomodate this. Flowey works similarly, except the juxtaposition of an innocent flower being this psychopath stalker makes the payoff of him actually turning into a real monster memorable as well. Its why I think so far, the Knight is disappointing. Just a very edgy tryhard antagonist without any of the depth or complexity of Sans and Flowey. Gaster is so far a much more interesting potential antagonist.

But you're right in genocide he is very serious and the game builds him up well, as well as the other scenes in neutral and pacifist that hint he has more than what meets the eye.The problem with the Knight is that it's just a mystery box so far. It's cool looking, has a good boss fight and a good theme, but we don't know anything about it except the fact it's cool looking. So far it's not much of a character, we know more of Gaster than it.
