Writing as a skill set has been devalued over the ages as less and less people read. Even if you didn't have formal education in the past, people who wrote video games were at least hobby writers who knew what made good writing.

These days most writers are complete amateurs who turn out derivative work based on their experience with other games and movies. Joss Whedon happened to be popular when they were "learning"

The difference is that anime doesn't do it in a sarcastic snarky way. If a character in an anime does something unrealistic or socially unacceptable such as flipping a table over in reaction to something, they'll add a "(They apologized and cleaned up after)" blurb. In western media they do a snarky Family Guy skit where the characters explain what the trope is and point out how weird it is for it to happen in real life. They pretty much just lean in to give the audience a wink and say "See? We know you've seen this trope before. You're so media literate, we'd never insult your intelligence by playing a trope straight like that!"

Huh. I guess I never saw that. I only browsed the website when it got popular in like 2010/2011 and didn't really ever go back. I thought the point of the website was just 'haha look at these overused tropes' and the occasional 'look at this subversion of a trope that's kinda cool.' I didn't know it got turned into a defense mechanism for bad writing

Writers in general have lost the ability to write dark comedy, where both macabre and dark humor are present without contradictions. Books like Catch 22 and The Good Soldier Svejk were perfect examples of wacky adventures in dystopian meat grinders.

A nihilistic would rather laugh at a meaningless story where the tension is never allowed to get tighter than a handshake from a homosexual than think about the heroism of our very human protagonist who wasn't invincible (as none of us are) but was still the light in the darkness. You can't have the latter if things aren't allowed to get dark.

I'm not saying that there's no space for MCU-style storytelling or even that it's inherently nihilistic to write that kind of story (we all need restful "turn your brain off" entertainment when we're exhausted), but it actually is pretty nihilistic to insist that unserious stories should be the standard template.

it's a form of tension and tone management, and the current crop of writers are by and large awful at managing the tension and tone of their stories.
you also rarely ever see a moment like in the Spongebob Squarpants Movie where the characters well and truly feel endangered, because so many writers decide to immediately undercut the tension instead of letting the moment marinate for a bit.
