I actually liked the RPG they did right around the first or second season. You play as a fire priest and Night's Watchman. Its massively jank and low budget but it was fun.

That ship has long sailed. Perfect moment for a Westeros RPG would have been before season 7 aired. Also I don't think the story works well as an action RPG or Bethesda style game. The story is way too character driven.
