I'm guessing it's just because of the palettes they used in FF1. The 6 classes are evenly split between a red/white palette (Fighter, White Mage, Red Mage) and a blue/brown palette (Monk, Thief, Black Mage). Making them wear red and have white hair would've been the best way to distinguish them visually from the other classes, especially the other two mages, while staying within the limits of those two palettes
It'd be kind of weird to call them "grey mages" when the sprite isn't grey at all. Even the Black Mage at least has a black void for a face to fit the name

The Black/White/Red mages are a reference to Dragon Lance's order of high sorcery where each alignment had to wear a specific colour when it came to robes.

Evil mages wore black, Good wore white and Neutral had red robes, FF1 didn't have alignments so Kawazu reinterpreted that colour scheme through a different lens, Black mages focused on offensive spells and support, white mages focused on defensive stuff, healing and anti-undead/evil spells, red mages were closer to the Krynn equivalent of Red robes being the mages that were most focused on learning magic without discrimination so they got everything but the top tier spells.

Black Mage and White Mage are required to get all the spells. Fighter is similarly important for getting the best swords. Black Belt lets you save money on weapons.

white mage in tactics A2 is primarily focused on healing spells and has few support spells but still feels to tied together

Many background elements already used the various shades of gray so it would make it hard to see the character if you then also used gray in the sprites. sprites were limited to 3 colors+black, red pops, green or gray would make the character hard to track against the background so the character sprites didn't use those colors.

Early FF is heavily based on D&D, in fact the JP version of FF1 uses spell slots like D&D instead of MP.
In the Dragonlance D&D setting there are 3 kinds of wizards:
>White Wizards who use magic for good and the betterment of man
>Black Wizards who use magic for destruction and their own desires
>Red Wizards who lay between these two dichotomies and use any kind of magic they please

Double Fighter, White Mage, Black Mage is a good party. That's the team I beat NES FF1 with. Fighter, Black Belt, White Mage, Black Mage is also great. Bosses fucking melt once FAST/Haste is on Black Belt. Just gotta hope he doesn't die beforehand. If you're playing a version that doesn't utilize the NES inventory system, you can have the BB use the Giant's Glove to give himself SABR (or does it cast TMPR? Been too long since I've played 1) to expedite the boss killing process.

Fighter, Black Belt, Red Mage, White Mage is another great setup. I've also swapped Black Mage for Red Mage in the double Fighter party.

No other rpg gave the same feel as this. Maybe its cause I was reading Fellowship at the time but getting the ship, then finding the canoe etc really felt like an adventure I was personally having rather than watching a movie in numbers go brrr format.

my guess? the red robes and red hat. the actual answer? Red was the color of the fighter in FF1, so to visually signify Red Mage as a hybrid melee and caster, he's red but has robes

Yep, there's a reason it was so successful. It feels like a real adventure. The big standout moment for me was climbing up the mirage tower and arriving at the floating fortress to see it's a classic sci-fi space ship. And then later making the connection that the Lufenians are a stranded advanced species who have gone somewhat primtive. It's really cool and calls back to the early 20th century where sci-fi and fantasy weren't so split.
If you liked FF1, try reading the Fafhrd and the Grey Mouser stories. They were the biggest inspiration for the early dnd stuff that inspired FF1 and 2.
