The Souls series' gameplay and its consequences have been a disaster for gaming.

Correct.
But the gameplay is Fromslop: non-stop dodging, stamina bar which depletes when you attack, run or dodge, potions which take a second or two to drink, etc.
It's not fun :(

I could see a soulslike gb-style zelda working, basically a zelda with less dungeons and more boss fights, but they went the path of making everything so fucking tedious. "Soulslike" just means tedious to these devs. They should have made normal mobs have way less HP and focus more on making exploration more interesting. Normal mobs don't take as many hits to down in the souls games as in this, where it's way more boring to fight them. And the maps are so bland.
Each stat point should feel like a big upgrade, but they're very weak increments.

I think part of it is lazy devs wanting to inflate play time so the game looks better cause it's longer.

Nine Sols did this right by having a difficulty adjustment. I played on Story Mode and it was still a decent challenge for this old man.

Do most people even enjoy tedious fights against basic mobs? Genuinely asking because I'm way out of the loop.
The whole dodging gimmick is also a chore, because it means enemies have unnatural attack patterns.

I beat Demons Soul even though I hated it. Might as well complete a game that I purchased. Never tried Dark Souls, I've had enough of this type of games.

I actually really enjoy Souls combat.
But I find it kinda cringe how it is forced into every new game because I like variety.
