There should be a game where the main gameplay loop is making a real life cartography map of the game world itself.

That's a tile based game. I mean a 3D FPS game where you using compass bearings and such to create a real life map on paper via a 19th-Century Geodetic Survey. Something that you could apply to real life.

How 19th-Century Geodetic Surveys Worked
Measure a baseline
A few kilometers of flat ground were measured extremely precisely using calibrated metal bars.
Build a triangulation network
Surveyors placed markers on mountains or towers and formed large chains of triangles across the landscape.
Measure angles with theodolites
Precision instruments measured angles between survey stations to arc-second accuracy.
Use astronomy for coordinates
Observations of stars determined latitude, longitude, and true north. Observing star transits, measuring zenith angles, comparing time using precision chronometers
Apply geodetic corrections
Calculations corrected for Earth’s curvature, atmospheric refraction, and elevation.
Adjust the network mathematically
Least-squares calculations distributed small errors to produce the most consistent map coordinates.

Obviously to not the same autistic degree like least squares.

Or otherwise just for general survival game fun where you map where certain resources are on a very very very large world.

Or in a very autistic manner, have a game based on procedural generation where each time it's random and scan your real life map and have AI check for >90% similarity.
