With high (but not cheesy) alchemy, you can just chug one potion of your making, and it will restore your magicka about as fast as you can expend it for a couple minutes, long enough to comfortably defeat pretty much anything.
Doesn't really even need to be that high, you can start with good enough stats for this if you focus on it and don't mind the failure chance.

The vast majority of enemies that you are going to fight in skyrim are either variants of real life animals or variants of featherless bipeds. The unique stuff is few and far between. How often do you fight a dragur (featherless biped in 75% of dungeons) vs something like a Wisp (seen maybe twice in a playthrough)
Meanwhile Morrowind, while maybe having a slightly smaller variety, does a much better job of showcasing that variety while also keeping the enemies unique between types.
You walk down a road in skyrim and you see some wolves or a sabrecat, some bandits, and maybe a radiant event every so often. The level cap for Skyrim's encounter zones on the roads is like level 6, iirc which definitely hurts matters. Morrowind's level scaling system goes to a higher level and actually adds challenging enemies like golden saints and dremora to the enemy pool.

Daggerfall is an exception in the sense that diseases are potentially deathly if you're an idiot but again it's simply a case of having cure available at hand (which you will if you're even remotely knowledgeable about the game, i.e. not an idiot). A heavily modded survival oriented Skyrim would be the only example where diseases would be a genuine concern and having resistance/immunity to them would be of genuine value rather than a convenience. In Daggerfall on the other hand you could potentially cheese yourself more points in character creation with disease weakness if you know what you're doing.

Because they've been in decline for a lifetime. Maybe they were really awe-inspiring thousands of years ago but by the time the games start most everyone can see their days are dwindling. They're kind of just immortals who chill all day, all their superhuman feats come from boasts so long ago that its practically myth. Plus they're liars. Its not like they aren't super important in Morrowind, even the Empire is sending the player in with the intention of maybe destroying them alongside the inevitable Dagoth Ur problem. uness you mean why isnt it mentioned in Oblivion and Skyrim, and I guess they felt like it wasn't relevant info for the players of those games but it still exists in the setting and part of dakr elf mystique. I'm with him on that. While the one on the right does look better, I liked when the Golden Saints were some sort of borderline machination. It gave them this almost surreal aura about them. Even their sound fx in Morrowind sound synthetic. They were monsters in the guise of women.

In Oblivion they were just generic slutty women.
