While I can't speak specifically for DQ7R, all the other newer releases have been totally fine on Draconion and you probably need to swap your gear out more than level up. Anything that cuts magic or fire/ice damage is going to be useful for the entire game in any of these games, as an example. DQ7 also has a really nice vocation system, so you probably just need to swap vocations for a bit if only just to increase your HP pool on your casters, if it's just an issue of dying too quickly on a boss. You've got a lot of options and it's a puzzle figuring it out.
