You could very easily zip through RE2 remake in less than 10 hours to get a good grasp on what the series is and if that appeals to you. But if you really need to quench the FOMO and get in on the new hotness, I guess you could just do RE9, the story has been retarded for decades and is largely unimportant. You'd be skipping a lot of great games, though.

I reccomend playing RE1, RE7, RE8, or Requiem. RE7 and RE8 don't really play like real Resident Evil games, and neither do the Grace parts in Requiem, but they introduce players to the horror aspects and introduce basic survival and action elements. Which is good on boarding for newer/casual players.

Requiem is an awful starting point, and playing Village before 7 makes no sense because the story is a direct continuation from it. Hell, Requiem is basically a direct sequel to RE2. OP should absolutely be starting with 2 if he wants to play Requiem sooner than later. Bare minimum for that story to make any sense would be the first four games. You don't really need the rest.
