How do I build an organic looking city?
I like playing city builders but I'm so uncreative when it comes to urban planning and can only do grids.

many cities in real life often look just like grids too. because that is often just the most efficient design. the only cities that feel "organic" are ones that sprung about before modern development.

Play shitties skylines if you want something that can look nice without a grid. But it's a shallow, garbage DLC platform. My advice for Anno is that if you don't care about efficiency just sprinkle parks and fences around buildings.

Grids are very efficient ways of building cities with low to no vehicle traffic. They've been used for centuries for a reason, but if you go back to medieval times you'll start seeing certain patterns, namely the circle. Google maps is your friend, check this out.
Paris is ancient, but it grew out from the Île (that's where Notre Dame is, the green drawing), but it no longer resembles much of a circle (red outline). When the romans showed up they started building straight roads in every which way, but look at the yellow road, that's the main drag that passes through the arc de triomphe (yellow) and it directly stares down the palace. Also, rich people build next to, or directly facing water if possible (blue line), but as you can see, Paris is a bunch of straight roads crossing each other (which is why it's a traffic nightmare) in a spiderweb pattern, almost.

Compare that to modern moscow. It's still very much a circle to this day with the center of it being the throne of power. Still lots of greenery near water, and you can (barely) see the main drags stretching away from the circle center in brown. Of course between those drags there's all the grid you could ever want, because at the end of the day, it's still a very efficient way to cram people in big growing cities.

For example in Anno 1800 I use this 10x10 grid as a base. This leaves space for ornaments or greenery and adds some variety to the placement of residences, while remaining quite efficient. Then you can go further, like leaving the odd center building out, or leaving 3 spaces for roads with a divider.

Rivers are indeed key, they've been ports of trade and sources of water for early civilizations (sometimes even right by the sea, but at the mouths of rivers). All major cities are build around rivers.
New York, Hudson.
London, Thames.
Chicago, the Chicago river.
Los Angeles, the LA River, etc etc.

Let the terrain dictate your road layout. Easiest when there's a y axis because you can just build your roads on contour but if it's flat you need to let water and otherwise impassable terrain guide you. If you literally just have an empty slate, start from a central point and radiate outwards in a circle
