Souls is easy to imitate because it's mechanically cheap indie shit with a coat of paint on it, absolutely nothing special going on under the hood.

Skyrim is diabolically difficult to simulate because like the games it was inspired by were as well, Ultima Underworld is basically a dungeon simulator. It's kind of the same reason why there were never any indie clones of The Sims or Animal Crossing, something about simulators is exceedingly difficult to replicate the texture of.

You have a point that the games are repetitive, but the specific level of jank that comes from emergent systems in Elder Scrolls that weren't ever supposed to talk to eachother, is actually really hard to pull off because you can't do it intentionally. it's a collision of independent systems and that collision is the game. Play through enough indie slop that tries to be a big open world where you pick things up like Valheim and the difference in quality is obvious. Valheim is not even close to Skyrim.

I think the difference is that Souls is primarily rules based and therefore easy to imitate, when you copy a mechanic you copy a rule. When you copy a game with simulation elements you're copying an ecology that makes the world feel lived in before you even get to it, the 'feeling alive' you're describing.
