That depends on the purpose. If you're talking about something like Wizardry or D&D, where the race is just a player option to a non-speaking character who will be part of a party, then lots of options are fine. It might be best to group them up if the list gets too long, just to avoid overwhelming people, but there's nothing wrong with dozens of options.
If the point of races is to populate the setting, then it's better to have few races with good concepts and a meaningful story related to them over lots of races with minor story points or that can easily get confused together. If you have 13 different races of talking frog, and they all have their own separate plotline about economic problems or local waterway sewage, then players are just going to start blending them together and treating them all as the same thing, even when the designers intended them to be separate.

More skeletons. There should just be more intelligent talking skeletons available. Skeletal bone liches who've become bored with life. Give me some fossilized dinosaur liches. And ancient kingdom devoted to the Egyptian Sun God Ra who raised the dead as a skeleton army, until the living people all died off and now it's just the skeletal army running things. Some future technocracy where some guy just replaced all his neurons with cybernetics and the flesh eventually rotted away, leaving him as a jumble of neural wiring wrapped around a skeleton he keeps to move around.

There's lots of neat shit you can do with skeletons.

The problem is, when the race selection is,

there isn't much of a point to the whole race system at all. Outside a mechanical different, or some minor aesthetics, there just isn't a point. You're basically just playing slightly-different-human and the NPCs you're interacting with are just slightly-different-human characters.

Wow, I'm going to the elf village to solve a political dispute caused by a wizard who is threatening to summon demons and destroy the kingdom. I'm so glad that this is the ELF village because there's no way that could've happened in any other location.

Well, yeah, elf villages are premier spots for demonic incursions. They're usually situated to some big natural font of magic perfect for corrupting, the mixture of natural life and ancient construction means their despoiling is particularly brutal, and the elves themselves usually had a hand in sealing the demons in the first place, so the demons can usually take vengeance on them into the bargain.

Dwarves are typically the ones who dig up demons. There have been many settings where the dwarves "dug too deep" and their greed resulted in a demon coming up from the depths and destroying them all.

But more to the point, it's that the situation can come from anywhere and any race. It could be a human wizard dealing with a demon to destroy a human village. It could be an ork wizard dealing with a demon to destroy an ork village. It could even be dwarf or halfling/hobbit/whatever doing the summoning. And it would be the same sort of situation, with the same characters, and the same results. Because really, it's just all Humans With Funny Hats™ in all situations and they're interchangeable. That works for a TTRPG because you have people who need to be able to RP those things and have it make sense, but if you're presenting them as a different culture or race or entire species, then just having the plot of mystical foreign exotic elf village be the same as your own backyard is kind of pointless. It becomes little more than window dressing.

That is actually pretty accurate to the original version of kobolds. They are basically these small, michievious people with pointy ears. Much more similar to fairies or gnomes.

There needs to be LESS races in fantasy vidya, shit like pathfinder or dnd slop is egregious with all the dogshit they slop up their games with. It should be cozy. You have the good races, short, medium, tall, for example dwarves, humans/elves, elves/humans. Humans are stockier, have fair skin and usually darker brown/black/auburn/dirty blond hair and darker blue/gray/green/brown eyes. Elves are more lithe, have pale skin, usually paler blonde/brown/red hair. Dwarves mostly redheads and albinos.

EVIL RACES. Tall orcs, medium hobgoblins, short goblins. Dark skin, no hair or weird pubic like bushy and such hair, dark bug eyes or glowing with evil like a sickly yellow. The evil races are iredeemably evil and ugly by nature, they're disgusting and a blight on beauty, some are scheming but physically weak like the goblins, while some are retarded fighters like the orcs. Kino setting immediatly. And the hero's duty is to kill the orcs/goblins/hobgoblins who are trying to destroy beauty and rape as well as summon void monsters onto earth and nightmarish demons, while the hero good races can mediate with good spirits/angels/gods. Simple as.

The problem with adding more playable races is that you have to choose between either massively expanding the amount of work you have to put into making the game if you include more outlandish races (making alternate forms of all armors that fit them, making sure animations fit their skeletons or making new ones altogether, etc) or just making a lot of them that look similar but have different skintones, heights, etc; neither of these choices are very good so generally having less is more.

For cRPG type games, more options is mostly good, but you have to find a sweet spot where you don't have too many and have to sacrifice reactivity.
As for what they should have more of, I like animated inanimate things that have gained souls like the Poppet ancestry for Pathfinder 2E where they're basic construct dolls made for simple tasks or as gifts for kids that will rarely just gain actual life sometimes.

Elder Scrolls needs more. There are a ton of Elve species mentioned in the lore that never make an appearance, Khajiit have more variations then playable species, and I wish they'd introduce the Lilmothiit. But I guess they don't want to turn into Blizzard.

There's the surviving Wild Elves who have fucked off into the woods because they hate people, the Sea Elves who fucked off to their islands after kicking the ass of the combined navies of Tamriel so bad the super duper wizards had to bail them out and sink the elves' fleet, the original Snow Elves who are all in hiding in secret underground places if any more still exist, and the Lefthanded Elves who the Redguards fought who are probably all dead.
