Can you recommend any other games whether single player or multiplayer that have a 'conquest' mode like Battlefront II (2005) did?
The only other one I can think of is Mechassault 2 Lone Wolf but that game isn't online anymore.

I could since i've definitely played a few of those, problem is, i have dementia.
I think there was another SW game with a conquest mode, the rts one, Empire at War i think?

Empire at War, Battlefleet Gothic: Armada 1 and 2 and the Mechwarrior turn-based game all have this mechanic but they're all RTS. I can't remember the last third person shooter that had a galactic theatre where you can actually take over worlds.

I've never understood what the appeal of this mode was supposed to be, what is different here vs just queuing up a series of bot matches?

It gives a little bit of context and stakes to each of the matches and adds factors that can make individual matches vary from each other.
It's like playing total war and just playing a series of battle maps. You can do it that way but the strategic layer just makes it a little more interesting.

LOTR Battle for Middle Earth 2 kind of.
It has a mode called War of the Ring that is turn-based as you move around and control regions on the full map of Middle-Earth. You can build 2 structures on each region and use those structures to make troops if possible, and along with 3 heroes that you start with you move units to capture other territories. This can then go into the main real-time strategy mode when you share a region with enemy units or if you move into an enemy region or they move into one of yours. There is also the option to auto-resolve the combat if you don't feel like playing a proper match, and conflicts between AI allies and enemies are always auto-resolved.

Soul Calibur 3's single player campaign reminds me of it. Just in that there's a strategy/tactics larger game that breaks down to the normal gameplay. SC3's was pretty enjoyable imo.
