It'd make the pokemon have more defensive options, keeping track of three types is a bit of a headache though. If I'm working it out correctly, a Fire/Flying/Dragon type Charizard would gain a weakness to Ice because of Flying and Dragon, it would also lose the Electric weakness because Dragon resists Electric.
There's one romhack called Emerald Elite Redux where pokemon have 4 abilities at once, some of these abilities add another type. Parasect for example gets this ability Phantom that adds the Ghost type to it, so Parasect is Bug/Grass/Ghost type. It gains weaknesses to Dark and Ghost but is immune to Normal and Fighting, don't know if it won in that exchange.

As someone who has played a few romhacks with three types.
Triple types, besides being pretty hard to keep track of, mostly make everyone's defensive typing way way worse. There are a few harmonic combinations, but the odds that something goes terribly wrong go up. Quad weaknesses are generally pretty awful to have, and suddenly they become pretty common. Pokemon having a triple resist or two is nice, but having like six weaknesses and three quads is MISERABLE.
Offensively, not that much changes. A handful of pokemon now get Stab on moves they already run for coverage, but a lot more end up with a type they almost never run, STAB or not.
This also broadly makes for a "rich get richer" effect, where good types become even better, and bad ones get even worse. Offensive types like Ice, Electric, Ground, and Rock are even more oppressive, especially in combination, because the exact same reasons they are good normally keeps coming up even more. It's a much more offensive meta.
